Israeli Salad with Chickpeas

Delivering a major dose of iron and fiber, chickpeas also increase diet satisfaction and help to ward off cravings for processed foods, according to a recent study.

Ingredients:

Chickpeas

  • 15 oz. can of chickpeas
  • 2 medium Roma tomatoes, cubed
  • 1 large cucumber, cubed
  • 1/2 medium red onion, cubed
  • Juice of half a lemon
  • 2 to 3 tablespoons of olive oil
  • Salt and pepper, to taste

Directions:

  1. Mix vegetables and chickpeas together in a large bowl.
  2. Pour lemon juice and olive oil over mixture.
  3. Add salt and pepper.
